Wood, plastic or glass? What I have learnt about chopping boards
Wood, plastic or glass? A maker's honest comparison — what each does to a knife edge, how they behave after years of use, and why no board is hygienic just because of what it's made from.

The short answer, before the story: for everyday chopping — vegetables, bread, cheese, cooked food — a substantial hardwood board is the surface I trust most: kind to knives, comfortable to cut on, and renewable rather than disposable. A separate washable board for raw meat and poultry is a sensible habit. Glass I avoid for chopping altogether, and plastic needs replacing once the surface is deeply scored. None of them is "self-cleaning" — every board earns its hygiene through washing and drying.
When I first became more seriously interested in making chopping boards, I mainly looked at the wood. I paid attention to the grain, the colour, the weight, the thickness and the way different species worked together. Over time, however, I began to think much more about what happens after a board leaves the workshop.
How does a board behave beneath a knife? How easy is it to keep clean? What happens after hundreds or thousands of cuts? And does the material we prepare our food on make any difference to our health?
The more I looked into it, the more I realised that the choice between a wooden, plastic or glass chopping board is not simply about appearance. Each material behaves very differently.
What matters most is how the board is used
Before comparing the materials, I think it is important to be honest about one thing: no chopping board is hygienic simply because it is made from a particular material.
A wooden board is not a magical self-cleaning surface. A new plastic board is not automatically safer. A glass board is not completely risk-free simply because it does not absorb moisture.
The biggest everyday concern is cross-contamination. If a board has been used for raw chicken or raw meat, bacteria can be transferred to salad, bread, fruit or cooked food if the board and knife are not washed properly.
In my own kitchen, I prefer a simple and practical approach. I use a separate board for raw poultry and meat, while a good wooden board is used for vegetables, bread, cheese, fruit and general preparation. That separation is easy to understand, easy to maintain and probably more useful than arguing that one material is always completely safe and another is always dangerous.
Whatever the material, the board should be washed properly with washing-up liquid and hot water, not just quickly wiped with a damp cloth.

Plastic chopping boards: practical, but not without problems
I understand why plastic boards are so common. They are inexpensive, light and easy to place in a dishwasher. For raw meat, a plastic board that can be washed at a high temperature can be a practical choice.
The problem is what happens as the surface becomes worn. Every time a knife passes across a plastic board, it leaves a small mark. At first, these marks may be almost invisible. After months or years of use, they can develop into deep grooves.
I have seen plastic boards where the centre no longer looks smooth at all. It begins to resemble a network of cuts, scratches and rough channels. Those grooves can hold moisture, grease and tiny pieces of food. Once a plastic board reaches that stage, cleaning it properly becomes more difficult.
This does not mean that every plastic board is unhygienic. A smooth plastic board in good condition can be cleaned effectively. But a deeply scarred board should not be kept indefinitely simply because it can still fit inside the dishwasher. When the grooves become difficult to clean, the board should be replaced.
What about bacteria in plastic knife grooves?
It is often said that plastic is more hygienic because it is non-porous. That sounds logical, but the "non-porous" argument does not tell the whole story.
A new plastic surface may be smooth and easy to clean. A heavily scratched plastic surface is very different. Food residue and bacteria can remain inside the damaged areas, particularly when fat or moisture is present.
This is one of the reasons I do not believe chopping boards should be judged only when they are new. The important question is how the surface behaves after repeated everyday use.
Plastic does not absorb water in the same way as wood, but it also does not have the same natural drying behaviour. Moisture can remain inside knife grooves, especially if the board is left flat after washing.
A wooden board is not a magical self-cleaning surface. A new plastic board is not automatically safer.
Plastic boards and microplastics
Another issue that has changed the way I think about plastic boards is microplastic wear. When a knife repeatedly cuts against plastic, tiny particles can be released from the surface. Research has shown that polyethylene and polypropylene chopping boards can shed microplastic particles during food preparation.
We should be careful not to exaggerate what this means. At the moment, science cannot say that using a plastic board will directly cause a particular illness. Research into microplastics and human health is still developing.
However, I personally see no advantage in adding another possible source of plastic particles to food when there are good alternatives available. For me, it is a matter of reducing unnecessary exposure rather than making dramatic health claims.

Glass chopping boards: easy to clean, hard on knives
Glass chopping boards often look very clean. They do not absorb juices, they are easy to wipe and they do not develop deep knife grooves in the same way as plastic.
But every time I hear a knife strike a glass board, I think about the edge of the blade. A kitchen knife edge is extremely thin. When it repeatedly hits a hard glass surface, the cutting edge can roll, deform or chip. Even a good-quality knife can lose its sharpness surprisingly quickly.
Glass does not give way beneath the blade. Wood and suitable plastic have at least some degree of softness. Glass, stone, ceramic and metal are much harder and far less forgiving.
A blunt knife does not just make cooking less enjoyable. A dull edge often requires more pressure, which can reduce control and make the knife more likely to slip.
For serving cheese, protecting a worktop or presenting food, glass can be useful. For regular chopping, I would not choose it.
Why wood behaves differently
Wood is a natural cellular material. It contains fibres and microscopic structures that can absorb and release moisture. Different species also contain naturally occurring compounds, including tannins and polyphenols.
European oak, which I often use in my work, is naturally rich in tannins. These compounds are one reason oak has such durability and character.
Some scientific studies suggest that certain types of wood can create less favourable conditions for the survival of some bacteria as the surface dries.
That does not mean bacteria instantly disappear the moment they touch a wooden board. It means the relationship between wood and bacteria is more complex than the idea that "porous equals dirty".
On some wooden surfaces, microorganisms can be drawn below the immediate surface together with moisture. As the board dries, conditions become less favourable for their survival and recovery. The exact effect depends on the wood species, the condition of the surface, moisture, temperature and cleaning method.
This is why I would never describe a wooden board as self-sterilising. It still needs to be washed properly.
Does wood naturally kill bacteria?
This is probably the question I am asked, and see discussed online, most often. My honest answer is that some woods appear to have natural antibacterial properties, but the phrase "wood kills bacteria" is too simple.
Research has shown that bacteria placed on some wooden surfaces can become difficult to recover after a period of drying. Other studies have found that properly cleaned wood and plastic can both be used hygienically.
So I would describe it this way: a clean, well-maintained hardwood chopping board is not naturally less hygienic than plastic. In some conditions, the structure and natural compounds in wood may make the environment less favourable for certain microorganisms. But wood should never be treated as a replacement for washing, drying and sensible food separation.
Drying is just as important as washing
One of the biggest mistakes I see with wooden boards is leaving them wet.
After washing, a board should be towel-dried and then stood on its edge so that air can circulate around both faces. I never recommend leaving a wooden board flat on a wet worktop. The underside cannot dry properly, and uneven moisture can eventually contribute to movement, warping or cracking.
A wooden board should also never be left soaking in a sink or placed in a dishwasher. The combination of prolonged water exposure, heat and rapid drying can make the timber swell and shrink unevenly. Even a heavy board can eventually suffer if it is repeatedly treated this way.
A wooden board likes a simple routine: wash it promptly, do not soak it, dry it thoroughly, stand it on its edge, and oil it when the surface begins to look dry. The full routine lives in our care guide.
Wood and particles from the cutting surface
A knife can remove microscopic material from any chopping surface. With plastic, those particles are synthetic polymers. With wood, they are natural plant-based materials, mainly cellulose and lignin.
That does not mean we should deliberately eat wood particles, but wood is a very different material from persistent plastic. From my perspective, this is another reason I prefer preparing most food on a properly made hardwood cutting board.
What each material does to your knives
The effect on knives is one of the clearest differences between the three materials.
Glass is extremely hard and unforgiving. It can dull a knife edge quickly and may chip thin or very hard blades. I would avoid it for regular chopping, particularly with good-quality kitchen knives.
Plastic is kinder to knives than glass. A softer, good-quality plastic board can be a reasonable cutting surface. However, very hard plastic can still wear an edge, and a deeply scarred board becomes less pleasant to use and harder to clean.
A suitable hardwood gives firm support while offering a small amount of natural give beneath the blade. This is one of the things I notice whenever I use a well-finished wooden board. The knife does not strike the surface with the same sharp, unpleasant impact that it makes on glass.
The difference becomes even more interesting with end-grain boards. On an end-grain board, the knife moves between the ends of the wood fibres rather than repeatedly cutting directly across them.
I often compare it to pressing a knife into the end of a tightly packed brush. The fibres separate slightly around the blade and then partially close again. This makes end grain particularly gentle on knife edges and helps the surface resist obvious cutting marks.
Not every wooden board is the same
The words "wooden chopping board" cover a very wide range of products. What separates them:
- The wood species
- The direction of the grain (edge grain or end grain)
- The moisture content of the timber
- The glue
- The finish
- The thickness and construction
A thin, poorly dried board made from unsuitable timber cannot be compared fairly with a substantial hardwood board made from carefully selected material.
Some boards sold as natural alternatives are made from very hard bamboo strips. Bamboo can be durable, but it is often much harder and more abrasive than traditional chopping-board timbers.
Personally, I prefer established hardwoods such as oak, maple, walnut, beech and cherry, provided they are properly selected and prepared.
Can a wooden board last longer?
This is where wood has one of its greatest advantages. A badly scratched plastic board is normally thrown away. A damaged glass board cannot be repaired safely. A solid wooden board can often be renewed.
When I sand a wooden board, remove the old surface marks and apply fresh food-safe oil and wax, the transformation can be remarkable. The grain becomes clear again. The colour deepens. The surface becomes smooth. The board feels ready to return to the kitchen.

A good wooden board should not be treated as a disposable kitchen accessory. It can be cared for, refreshed and used for many years.

So which chopping board would I choose?
For raw poultry and raw meat, a separate washable board is a sensible and practical option. For vegetables, fruit, bread, cheese, cooked food and everyday preparation, I prefer a substantial hardwood board.
Glass is easy to clean, but it is too hard on knives for regular chopping. Plastic is practical and affordable, but it wears, develops deep grooves and can release small plastic particles during use. Wood requires slightly more care, but in return it offers a surface that is comfortable to cut on, gentle on knives, renewable and naturally beautiful.
My preference for wood is not based on the idea that it is magically sterile. It is based on how it behaves in real life.
A good wooden board feels stable beneath the knife. It can be restored rather than thrown away. It does not add plastic wear to food. And when it is washed, dried and maintained properly, it can remain part of the kitchen for many years.

Are wooden chopping boards hygienic?
Yes — a clean, well-maintained hardwood board is not less hygienic than plastic. Wash it with washing-up liquid and hot water, dry it upright, and keep a separate board for raw meat. No material replaces good washing habits.
Which board should I use for raw meat and chicken?
