Oak is the classic British chopping-board timber — hard, dense and close-grained, with a pale golden colour that deepens under oil. It takes daily knife work and lasts for years with a little care. Every oak board here is built by hand by Ewald from British-supplied hardwood, finished with food-safe oil, in a workshop outside Selby, North Yorkshire.

Oak is high in tannins, so very acidic foods or wet metal left on the surface can mark it. Wipe spills and dry the board after use and it stays clean; a re-oil lifts the surface back.
Hand-wash, dry it on edge, and re-oil with a food-safe oil when it looks dry. Never the dishwasher.
